Ana Rascón is a senior food scientist and consultant with extensive experience supporting food product development, optimisation, and scale-up. She assists companies in creating new products and re-engineering existing ones to improve quality, yield, profitability, and sustainability, with active involvement from early concept through pilot and full industrial production.
Her core specialty is the use of enzymes in food processing, supported by a strong foundation in biochemistry, enzymology, nutrition, cell biology, and molecular biology, combined with decades of hands-on industrial and academic experience. Ana has particular expertise in oat-based products, liquid cereals, pulses, and functional foods, helping translate advanced science into robust, commercially viable processes.
